Mashed Potato with Miso Tomato Zucchini

Simple ingredients, delightful dish.

3 medium potatoes
1 zucchini
1 cup chopped tomatoes
1 tablespoon white miso paste
2 garlic cloves, chopped.
1 tablespoon olive oil
Preheat oven to 400 degrees Fahrenheit. Bake potatoes for 1 hour. While waiting for the potatoes. Peel the zucchini and cut into small cubes. Heat olive oil, sauté garlic for 1 minute. Add tomatoes, zucchini and miso. Cook over medium heat while stirring, for 5 to 8 minutes. Let potatoes cool a little, peel and cut into chunks. Place in a bowl and mash with a spoon. Pour the miso tomato zucchini sauce over the potatoes.
