Who wouldn’t want dessert for breakfast with these Girl Scout Cookie inspired donuts?! Mini Baked Samoa Donuts with a 5 Minute Caramel sauce are a whipped together in a single bowl, full of chocolate, a tender vanilla donut and topped with toasted coconut and a healthy caramel sauce!

Donuts:
¾ cup almond milk
1 tsp lemon juice
1 cup + 2 Tbsp whole wheat flour
¼ cup sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ Tbsp ground flax seed
2 Tbsp melted coconut oil
1 tsp. vanilla extract
Caramel Sauce:
1 cup packed medjool dates (about 200 grams)
¼ cup unsweetened almond or cashew milk
1 tablespoon maple syrup
1 tsp vanilla extract
1 tablespoon melted coconut oil
Toppings:
½ cup shredded coconut flakes
1½ cups dairy free chocolate chips, divided (or regular if you can have dairy)
