Miso Avocado Carrot Rolls

Serve carrot like sushi!

1 carrot
½ cup avocado cubes
2 tablespoon minced onion
½ tablespoon miso paste
Few drops of lemon juice
Using a peeler, peel the carrot into 1-inch x 4 to 5-inch long slices. You can cut the carrot first so you start slicing from the middle. Boil a small pot of water, throw in the carrot slices and cook for 1 to 2 minutes. Drain and let cool. (You can skip this step if you like raw carrot, this step just makes the carrot softer.) Mix avocado, onion, miso and lemon juice in a small blender or by hand using a spoon. Mash the avocado so it becomes a paste. Lay out the carrot slices on a plate. Scoop a little avocado paste at a time and spread it evenly over the slice. Starting from the narrower tip, roll up the carrot slice.
