Moroccan Pad Thai

Moroccan Pad Thai is full of rice noodles, carrots, zucchini and delicious spices. It has the look and feel of pad Thai, but with a delicious Moroccan twist to the flavors.

8 ounces rice noodles
1 tablespoons garlic
1 tablespoon ginger
1 cup grated carrots
1 cup matchstick zucchini
1 cup diced onion
14 ounces canned tomatoes
1 1/2 cup vegetable stock
1 tablespoon parsley
1 tablespoon paprika
1/2 teaspoon coriander
1/4 teaspoon cumin
1/2 teaspoon turmeric
1/2 cup dried apricots
1/2 cup pistachios
