This is a must try dish! It's better than lasagna, and a frequent request in our house.

8 ounces (or about 3 cups) uncooked mostaccioli
1 egg
2 cups (16 ounces) 1% cottage cheese
2-3 handfuls of fresh spinach, chopped (can use about 10 oz of frozen, make sure to squeeze dry)
1 cup shredded mozzarella cheese
2/3 cup shredded parmesan cheese
salt, pepper, parley, and oregano to taste
2 1/2 cups (or 1 jar) meatless spaghetti sauce
Cook pasta according to package directions. Meanwhile, in a large bowl, combine the egg, cottage cheese, spinach, mozzarella cheese, parmesan cheese, parsley, oregano, salt and pepper; set aside. Drain...
