No Bake Chocolate Peanut Butter Oat Bars

A no-bake, no-stove recipe that requires 40 seconds in the microwave and no more heat! Perfect for summer...and also gluten free, dairy free, and sweetened with honey!

1 1/2 cups smooth peanut butter
1/2 cup honey
1 cup dark or semi-sweet chocolate chips
2 cups quick cooking oats
1 cup sweetened shredded coconut
1/3 cup ground flaxseed
1 tsp vanilla extract
