North-Eastern Thai Spicy Prawn Salad

This dish is unique in Thai Salad, in that it uses chili jam to make its spicy flavour. (See details of chili jam in the full recipe on my site) With the chili jam, the spiciness of this dish becomes a little sweet and tangy, and it well matches and strengthens the fresh taste of the prawn.

12 oz. prawns
1 1/2 oz. chili jam
3 T. fish sauce
6 T. lime juice
1 1/2 oz. lemongrass (lower 1/3 only)
6 shallots
15 small chili peppers
1/2 oz. coriander leaves
3/4 oz. fresh mint leaves
4 head spring onions
8 lime leaves (discard the stem)
