Enjoy a favorite Christmas cookie with a little less fat and calories. It's still full of cookie yumminess; coconut, oatmeal, corn flakes and nuts.

¼ cup regular butter
½ cup sugar or ¼ cup sugar and 2 tbsp stevia
½ cup brown sugar
1 egg
¼ cup vegetable oil
¼ cup fat-free Greek yogurt
1 cup all-purpose, unbleached flour
¾ cup whole wheat pastry flour
½ tsp. baking soda
½ tsp. kosher salt
½ cup quick cooking oatmeal
½ cup corn flakes
¼ cup unsweetened shredded coconut
1 tsp. vanilla
¼ cup unsalted peanuts, crushed
½ cup sugar or ¼ cup sugar and 2 tbsp stevia
½ cup brown sugar
1 egg
¼ cup vegetable oil
¼ cup fat-free Greek yogurt
1 cup all-purpose, unbleached flour
¾ cup whole wheat pastry flour
½ tsp. baking soda
½ tsp. kosher salt
½ cup quick cooking oatmeal
½ cup corn flakes
¼ cup unsweetened shredded coconut
1 tsp. vanilla
¼ cup unsalted peanuts, crushed
Preheat oven to 375°.
