Love oatmeal cookies? Love ginger? Love Biscoff or Speculoos Cookie Butter? Then you will LOVE these Oatmeal Ginger Sandwich Cookies with Cookie Butter Cream Filling. These cookies are absolutely delicious and taste super indulgent, but they aren't! No butter was used in the making of these cookies and I used egg whites, non-fat Greek yogurtand white whole wheat flour! Treat yourself in a healthy cookie with just a little bit of additional sweetness from the filling.

1/2 cup brown sugar
1/2 cup vegetable oil
2 egg whites
1 tsp vanilla extract
1/2 cup non-fat Greek yogurt
2 tbsp Gourmet Garden ginger (alternatively, you could mince up some fresh ginger too!)
1 cup white whole wheat flour
2 1/2 cups old fashioned rolled oats
1 tbsp cinnamon
1/2 tsp baking soda
1 cup Trader Joe's Speculoos Cookie Butter or Biscoff
1/4 cup unsweetened almond milk
3-4 tbsp powdered sugar
1 tbsp Gourmet Garden ginger
