Omelette in a Jar (Paleo, Low Carb)

This omelette in a jar recipe is perfect for a high protein and low carb breakfast on the go. Make ahead and eat all week.

1 cup chopped sweet peppers
1 cup cheddar
1 cup mushrooms, sliced
1 cup spinach, chopped
7 eggs
½ cup plain yogurt (I used whole milk but use what you like)
2 sausage patties, chopped
1 t olive oil
