One Pot Spring Veggie Dish

A one pot, easy Spring Veggie dish. So refreshing and super easy to make!

3 cups shells pasta (measured when dry)
8 ounces asparagus
1 cup frozen corn
1 cup frozen peas
1 tablespoon butter
1 cup shredded Parmesan cheese
1/4 cup pine nuts, optional
Dressing
2 tablespoons olive oil
2 tablespoons rice vinegar
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon dijon mustard (not regular)
1 teaspoon lemon zest
3 tablespoons lemon juice (from a fresh lemon, more to taste)
