2 small sweet potatoes
1/4 green bell pepper
½ cup freshly squeezed orange juice
1/2 tablespoon minced garlic
1 tablespoon fresh thyme
1/4 green bell pepper

Bake sweet potatoes at 375ºF for about 1 hour or until soft. Let cool, then peel and cut into chunks.
