Oriental Chicken Salad Recipe

This is a Asian style salad with mandarin oranges, cabbage, green onions, and almonds. The salad is topped with a sesame oil vinegar dressing.

2 large chicken breasts
Salt and Pepper to taste
3 smaller romaine lettuce hearts chopped into bite sized pieces
1 orange bell pepper sliced (red or yellow would be fine too)
1 large carrot peeled and sliced into very thin sticks
1/4 small red cabbage shredded
15 ounce can Mandarin Oranges drained
4 green onions thinly sliced
1/4 cup sliced almonds lightly toasted
FOR THE DRESSING
1/3 cup honey
3 tbsp white vinegar
2 tbsp homemade mayo
1 tsp sesame oil
1/2 tsp salt
