1 Medium zucchini (cut into slices or bite size pieces)
1 Medium summer squash (cut into slices or bite size pieces)
1 Medium orange bell pepper (cut into slices or bite size pieces)
1 cup mushrooms (sliced)
1 Medium red onion (sliced)
3 tablespoons extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Large zip lock plastic bag

Large zip lock plastic bag
Preheat oven to 350 degrees. Put cut vegetables in a large plastic zip lock bag along with olive oil, salt and pepper. Close plastic bag and toss vegetables and olive oil until the are coated.
