Paleo Coconut Orange Superfood Salmon Salad

This Kale Salad Recipe has a tropical dressing and is packed with 7 superfoods to make it a quick, easy healthy dinner. It’s Perfect for weeknights!

For the salad:
1 Small Salmon filet (4oz)
¼ Cup Pure orange juice
1 tsp Coconut oil
1 tsp Honey
1½ Cups Baby Kale
1½ Cups Spinach
2 Small Tangerines (or 1 orange) broken into segments
3 Tbsp Pomegranate seeds
½ an Avocado, sliced
For the vinaigrette
½ Tbsp Coconut oil
1 tsp honey
2½ Tsbp Fresh orange juice
Small pinch of salt
