2 Lbs Sweet potato, peeled and cut into large chunks (about 3 medium sweet potatoes)
1/2 Cup Pecans
6 Tbsp Maple Syrup
1/4 Cup Unsweetened vanilla almond milk
2 Large eggs
1 1/2 tsp Cinnamon
1 tsp Vanilla extract
3/4 tsp Sea salt
1/4 tsp Ground nutmeg
Pinch of pepper
1/2 Cup Pecans
