Just as good as Chicken Parmesan, but baked, not deep fried.

2 tablespoons butter
2 tablespoons olive oil
1 garlic clove, minced
4 boneless, skinless chicken breasts
1 cup breadcrumbs
½ cup finely grated parmesan cheese
¼ teaspoon salt
1/8 teaspoon pepper
