Parsley Chestnut Salad W/ Lemon Vinaigrette

A wonderful, healty, beautifying salad!

FOR THE SALAD:
¼ Cup Extra Virgin Olive Oil
2 Tablespoons Freshly Squeezed Lemon Juice
1 Teaspoon Fresh Lemon Zest
1 Teaspoon Whole Grain Mustard
½ Teaspoon Salt
¼ Teaspoon Freshly Cracked Black Pepper

FOR THE SALAD

2 Cups Thinly Sliced Celery on a bias, about 3 ribs
4 Cups Fresh Italian Flat Leaf Parsley, Roughly Chopped, about 2 big bunches
1 1/2 Cups Cooked Chestnuts, halved
1 Cup Cooked Wild Rice
Add all the dressing ingredients to a large bowl, and whisk until incorporated. Add the salad ingredients to the dressing, and toss well.
