Perfect Paleo Chicken Pot Pie


This Perfect Chicken Pot Pie is among those handy comfort foods that I have really missed after we altered our diet around 4 years back. My mothers chicken pot pie happened to be among one of my personal favorites while growing up. After we changed to Paleo, I had virtually given up on the thought of making a delicious Paleo chicken pot pie recipe. I want to be honest - creating the grain free crust which is flakey, tasty and that actually binds together is really quite a very tall order. Nevert

For the crust:

1.5 cups of almond flour, blanched
½ cup of tapioca flour
1 teaspoon of sea salt
½ teaspoon of gluten free baking powder
2/3 cup of palm shortening
6 Tablespoons of cold water

For the filling:

1 pound of skinless, boneless fresh chicken breasts, sliced into small-sized cubes
2 chopped carrots
1 cup of chopped broccoli
1/3 cup of fresh butter
1/3 cup of onion, chopped
¼ cup of tapioca flour
½ teaspoon of sea salt
¼ teaspoon of pepper
small pinch of paprika
1¾ cups of fresh chicken broth
1/3 cup of almond milk
For the crust: With a clean fork, mix together completely the almond flour, the tapioca flour, the sea salt along with the baking powder. Put in the palm shortening till the mixture looks like course...
