Pesto, Veggie, Shrimp, Quinoa Melange Chopped

I made a new version of pesto and thought I’d try using it in a Melange Chopped. Something warm, hearty and “comfort foody”, but still adhering to The Chopped Concept of Chopping calories by adding lots of veggies. Just to make sure I was using “mélange” correctly, here’s a definition I found. “a mixture; a medley. “a mélange of tender vegetables and herbs”. Yep, that pretty much describes a Mélange Chopped!

Sauté Pan Ingredients:
1 Brown or Red Onion, Chopped
1 cup Chopped Mushrooms
2 Garlic Cloves, finely Chopped
2 Tablespoon Olive Oil
1 cup cooked Quinoa
2 Tablespoons Pesto
I made my own, but you can use store bought if you’d like.
1 cup White Beans, if canned, slightly drained.
1 cup Roasted Asparagus , Chopped
1 cup Roasted Yam Cubes
1 – 2 Tablespoons Red Wine Vinegar
16 Medium Shrimp, Thirded
Kosher or Sea Salt to taste.
