Perfectly cool, sweet, and SO refreshing, this fruit-infused Pineapple Strawberry Mojito cocktail has it all! Perfect for summer!

8 strawberries trimmed ( hulled, quartered )
8 pineapple chunks ( fresh is best but canned will work too )
20 mint leaves plus more for garnishing
1 lime quartered
¼ cup simple syrup
8 oz pineapple juice
8 oz light rum
8-12 frozen strawberries
soda water ( club soda, lemon-lime soda )
