Pumpkin and feta empanadas

A new way to cook with pumpkin this autumn!

1 small red onion, finely diced
2 cloves garlic, minced
1/4tsp dried thyme or sage
200g pumpkin purée
40g feta cheese, coarsely crumbled
Salt
Black pepper
300g shortcrust pastry
2-3tbsp flour, for rolling pastry
2tbsp milk
Cook the onion and garlic fairly slowly over a medium heat until soft and transparent - I just sautéed mine in a little water, but you could use oil if you prefer.
