Pumpkin Cream Cheese Bars

For those who hate counting calories. This is a delicious, calorie conscious recipe.

1 box Angel Food Cake
Pumpkin Mixture
15 oz Canned Pumpkin Puree (not Pumpkin Pie Filling)
3/4 C Water
1/2 tsp Cinnamon (ground)

Cram CHeese Mixture
8 oz reduced Fat Cream Cheese
4 T of Water
1. Let the cream cheese soften on the counter. Beat the cream cheese with a the tablespoons of water (one at a time) until the mixture is smooth. ( You may need more or less than 4 T. This will thin out the cream cheese a bit.) 2. In a separate bowl, mix the cake mix, pumpkin, water and cinnamon together until it is smooth and well mixed. 3. In a 9x13 inch dish, sprayed with PAM, add HALF of the cake-pumpkin mix. Smooth out with a spatula. 4. Drizzle HALF of the cream cheese mixture over the top and smooth it out. 5. Add remaining cake-pumpkin mix and remaining cream cheese in layers as before. 6. Take a butter knife, stick it into the mix and go back and forth through the layers of the mixes in figure 8’s – this will marble it. 7. Bake for 35 minutes at 375º F OR until a toothpick comes out clean.
