These easy gluten free cookies are soft, chewy and loaded with chocolate. They’re made with quinoa flour and natural sugar for a healthier treat!

2 Cups (170g) Unsweetened coconut flakes, divided
1 1/2 Cups (138g) Oat flour
1 1/2 Cups (165) Toasted Quinoa Flour
1/2 Cup (58g) Dutch-process cocoa powder, sifted if lumpy
3/4 tsp Baking soda
1/2 tsp Salt
1 Cup (200g) Light brown sugar, raw sugar or coconut sugar
2/3 Cup (150g) Coconut oil, melted
2 Large eggs, at room temperature
6 Tbsps (120g) Honey
1 tsp Coconut extract or vanilla extract
2 Tbsp water
1 Cup (170g) Semi-sweet chocolate chips (optional)
