I'm sure that you know what quinoa is, it has taken the world by storm over the past few years. 1 T olive oil
1 small red onion, chopped
2 cloves garlic, minced
3/4 C uncooked quinoa
1 1/2 C vegetable stock (or chicken)
1/4 tsp cayenne
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 can corn (sweet variety, drained)
1 can black beans (rinsed and drained)
1/2 C cilantro, chopped
1 small red onion, chopped
2 cloves garlic, minced
3/4 C uncooked quinoa
1 1/2 C vegetable stock (or chicken)
1/4 tsp cayenne
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 can corn (sweet variety, drained)
1 can black beans (rinsed and drained)
1/2 C cilantro, chopped
In a medium saucepan heat the oil over medium heat. Add the onions and cook 4-5 minutes, add garlic and cook until just fragrant, about 1 minute.
