Red Bell Pepper Salsa

This salsa is also excellent served over baked tilapia or other white fish.

2 red bell peppers, diced
12 oz cherry tomatoes, quartered
3-4 bunches green onions, diced
¼-½ cup fresh cilantro
Juice from ½ lemon
1 TBSP Emeril's Essence seasoning
Dash of salt
½ tsp or so of garlic powder
Combine all ingredients. Serve with tortilla chips or toasted pita slices.
