Red Wine Risotto

Italian tomato sauce, rice and a splash of red wine is a not only a super-tasty combination: it's also simple enough for a midweek treat yet fancy enough for a dinner party.

1 onion, finely chopped
3 cloves garlic,, finely chopped
Cherry tomatoes, chopped
Fresh parsley, finely chopped
300g rice (I used basmati, but risotto rice would also work well)
1 can of tinned tomatoes
Stock cube
Boiling water
1 large glass of dry red wine (+ the rest of the bottle for enjoying afterwards…)
Salt and pepper to taste
Optional: Mozzerella and parsley for garnishing
