Velveeta and Rotel. Rotel and Velveeta. It’s like a never-ending love story. But let’s be honest - sometimes Velveeta has that processed taste to it, and it’s hard to get over it. I’ve heard people suggest adding some beer or canned green chiles to the queso to combat this, but why stop there? GO BIG OR GO HOME. So here it is - perfect for The Superbowl and any other excuse you can think of: Ridiculous Loaded Queso.

1 small block of velveeta
1 8 oz. package cream cheese
1 can rotel (I always go with the HOT!)
2 strips of bacon
1/2 lb ground beef
15 cherry tomatoes
1-2 jalapenos (depending on how spicy you wanna get!)
1/2 cup chopped red onion

Begin by chopping up the bacon into small pieces, and then pan frying until it is crispy.
While that cooks, chop/slice up your cherry tomatoes, jalapeno and red onion to your liking.
