Crispy roasted potatoes loaded with flavorful Dijon mustard and fresh Dill.

1 lb. red skin potatoes
1 Tbsp. olive oil
2 Tbsp. Dijon mustard
2 Tbsp. fresh dill (or 1 tsp dried)
1 tsp. garlic powder
salt & pepper to taste
