Fennel is one of those vegetables that I have grown really fond of. I love the taste of them and they pair well with seafood, (especially shell fish), tomatoes, herbs of all kinds...a really versatile ingredient. Roasting them could not be easier for a really satisfying result.

3 whole fennel bulbs
3 tbsp olive oil
1 tbsp honey
salt and pepper to taste

-cut the fennel bulbs lengthwise and cut into wedges, keeping the centre attached so they don't come apart
-drizzle with honey, olive oil and season well
