Summer may soon be over but who can get enough of this healthy and easy to make arugula salad. Great as a side or even Lunch!

Salad

1 buffalo mozzarella cheese

5-6 cherry tomatoes (or as much as you like)

A large handfuls of fresh wild rocket, about 100g

Dressing

2 tablespoons of Extra Virgin Olive Oil

A dash of lime

Sea salt and freshly ground black pepper

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.
