Summer may soon be over but who can get enough of this healthy and easy to make arugula salad. Great as a side or even Lunch!

Salad
1 buffalo mozzarella cheese
5-6 cherry tomatoes (or as much as you like)
A large handfuls of fresh wild rocket, about 100g
Dressing
2 tablespoons of Extra Virgin Olive Oil
A dash of lime
Sea salt and freshly ground black pepper

Drain the mozzarella. Slice thickly or pull them apart into big rough chunks, showing the grainy strands
