Saucy Banana Bread
My standby banana bread recipe is super quick to put together, and the apple sauce replaces the need for any butter or oil, while keeping the bread moist. It makes a healthy breakfast on the run, or cut into snack sized cubes. Play around with the add-ins to make it your own, or use whatever you have on hand.

1 cup white flour
1 cup whole wheat flour (or buckwheat flour)
1/2 cup bran
1 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/2 cup apple sauce
6 bananas, mashed
2 eggs
Squirt of honey
Add-ins:
1/4 cup chia seeds
1/4 cup flax seeds
1/2 cup unsweetened coconut
1/2 cup walnuts
1/2 cup chocolate chips or 1 cup fresh/frozen blueberries
1 cup whole wheat flour (or buckwheat flour)
1/2 cup bran
1 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/2 cup apple sauce
6 bananas, mashed
2 eggs

Add-ins:
1/4 cup chia seeds
1/4 cup flax seeds
1/2 cup unsweetened coconut
1/2 cup walnuts
1/2 cup chocolate chips or 1 cup fresh/frozen blueberries
Preheat oven to 350 F.
Lightly grease a loaf pan and set aside.
In a large bowl mash bananas using a potato masher or fork. If using frozen bananas, defrost in the microwave first. Mix in apple sauce, mashed bananas, eggs and honey until combined.
In a small bowl combine flours, bran, baking soda, nutmeg, chia seeds, flax seeds, coconut and walnuts. Add dry mixture into wet until combined. Stir in blueberries/ chocolate chips.
Pour mixture into loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool for 5 minutes before removing from loaf pan and onto a cooling rack. Slice and slather with a healthy spoonful of peanut butter!
Store in refrigerator.
