This is my new favorite soup. Easy to make & healthy too!

2 tablespoons butter
1 cup chopped green onion
1 cup diced red bell pepper
1/2 cup diced jarred jalapeno pepper (optional)
3 tablespoons flour
1 1/2 cups 1% milk
1 1/2 cups chicken broth
1 1/2 cups frozen diced hash browns
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cumin
1 (15.25 ounce) can whole corn, drained
1 pound large shrimp, peeled & deveined
Cilantro to garnish
1 cup chopped green onion

1/2 cup diced jarred jalapeno pepper (optional)

1 1/2 cups 1% milk
1 1/2 cups chicken broth
1 1/2 cups frozen diced hash browns
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cumin
1 (15.25 ounce) can whole corn, drained
1 pound large shrimp, peeled & deveined
Cilantro to garnish
Melt butter in a large pot. Add onions, bell pepper and diced jalapenos. Saute until tender, about 3 minutes.
Add flour to pot and stir continuously for 1 minute.
