Simple Ham Fried Rice

This recipe is an easy way to make your own "takeout". This Ham Fried Rice uses simple ingredients and cooks up quickly. It goes well with a mandarin orange side salad.

2 cups rice, (I like to use Jasmine)
1 cup diced onion
2 medium carrots, peeled and diced
1 Tablespoon cooking oil (I use Olive Oil)
1 teaspoon Sesame Seed Oil (optional)
2 garlic clove, minced
1 1/2 cups ham, diced
1/4 cup soy sauce (use La Choy for gluten-free option)
1 tsp. chili garlic sauce (optional)
5 eggs, scrambled
1 cup frozen peas
1 cup diced onion

1. Cook rice according to directions and then set aside.
2. Heat up oils in a skillet over medium heat. Add the diced onions, carrots, and minced garlic. Cook until the onions are clear and the carrots are tender. Add the ham into the skillet and saute for 5 minutes.
3. Add the soy sauce and chili garlic sauce (if desired). Stir until the sauce is mixed in.
4. In a smaller skillet, scramble 5 eggs.
5. Add the ham mixture and the eggs into the pan of rice. Stir until mixed evenly. Add the frozen peas and stir until mixed. Serve while hot.
