Skipjack Tuna Stack

Skipjack tuna is stacked on top of lime infused rice, cucumber, and Mandarin oranges, then it's all drizzled with a delicious pomegranate reduction. Delicious as an appetizer, lunch, or light dinner.

1 3 ounce can Skipjack tuna (I used Ocean Naturals), drained and lightly flaked
1 cup uncooked short grain rice (I used Arborrio)
juice from 2-3 limes (you'll need 1/4 cup juice)
1/4 medium cucumber, thinly sliced (peeled or unpeeled, per your preference)
1/2 cup mandarin oranges, diced
4 ounces (1/2 liquid cup) pomegranate juice
1 scallion, thinly sliced (just the top greens)
salt and pepper, to taste
