Slow Cooker Kale and Lentil Soup

This vegetarian soup has lots of protein due to the lentils. It is very easy to put together. All you need to do is dump all the ingredients in the slow cooker and let it do it's thing.

1 pound lentils
2 pounds vegetable broth
4 cups water
1 red onion, minced
3-4 carrots, peeled and chopped
3 stalks celery, chopped
4 cups kale, chopped
1 sprig rosemary
2 sprigs thyme
Salt and Pepper to taste
Throw everything except the salt into the slow cooker. The salt will make the lentils cook slower. Cook on low for 5 hours or on High for 3 hours. When the lentils are cooked, season with salt to taste and...
