1 (4-1/2- to 5-pound) boneless or bone-in pork shoulder (or pork butt)

2 cups mayonnaise
1 cup apple cider vinegar
1 tablespoon brown sugar
1 teaspoon pepper
½ teaspoon salt, or more to taste
½ teaspoon cayenne pepper
Juice from 1 lemon
