A rich dark fudge cake with a sweet caramel topping smothered with dark chocolate chips and crushed peanuts.

1½ cup flour
1 cup natural granulated sweetener/sugar of choice
½ cup unsweetened cocoa powder
1 teaspoon baking powder
2 whole eggs
? cup low fat greek yoghurt
? cup Natural Peanut Cacao Spread
¾ cup unsweetened almond milk
CARAMEL TOPPING:
1 cup fresh pitted Medjool dates (approx 10 dates)
½ cup natural granulated sweetener/sugar of choice
? cup unsweetened almond milk
1 teaspoon alcohol free vanilla extract
2 tablespoons RICE MALT EXTRACT
EXTRA TOPPING:
2 tablespoons milk or dark chocolate chips, melted
2 tablespoons crushed peanuts

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
