1 cup red quinoa (Trader Joe's)
2 cups water
2 tablespoons taco seasoning (Ortega low-sodium)
4 medium bell peppers, tops removed, seeded
1 1/2 cup fat free cheddar cheese (Kraft)
14 ounces canned black beans, rinsed and drained
