Spicy Chicken Pho Casserole

There’s something about a one-bowl-warm-in-your-stomach-super-flavorful casserole that everyone loves. And I like everything spicy. Pho real!

2 cups Pacific Soup Starter Chicken Pho flavor
3/4 lb chicken breast, thawed
1/2 eggplant, sliced
1 can cream of chicken soup
1/2 fresh jalapeno, finely chopped
1 tbsp minced garlic
3 scallions, chopped
1 bag egg noodles
cilantro, lime wedges and sriracha for garnish (optional, but HIGHLY advised)
salt and pepper, to taste
red pepper flakes, to taste
