Spicy Lo Mein Noodles

Spicy with a touch of sweetness Lo Mein Noodles. Perfect as a meal or as a side dish.

4 oz. lo mein noodles
2 Tbsp butter
1/4 tsp crushed red pepper
1 egg, whisked
1 Tbsp brown sugar
1Tbsp soy sauce
1 Tbsp Sriracha (aka rooster) sauce
1/4 cup fresh cilantro leaves
1 sliced scallion (green onion)

Cook lo mein noodles according to package directions. While noodles are cooking, prepare the sauce. Combine brown sugar, soy sauce and sriracha sauce. Stir together and set aside. In large frying pan, melt 2 Tablespoons of butter over medium-low heat. Add crushed red pepper to the butter. In separate bowl, whisk egg and add to pan with butter/red pepper. Gently stir and cook egg until done. Reduce heat to low. When noodles are done, drain water and add to skillet with cooked egg. Add the sauce to the pan. Stir until noodles are coated with sauce. Sprinkle noodles with cilantro and green onions.
