Simple recipe for cheesy spinach manicotti that can be made and on the table in 50 minutes. Classic comfort food made with spinach, plenty of cheeses, parsley, pasta sauce. This recipe is vegetarian and can be adapted with added vegetables.

10 ounces frozen spinach
3 tablespoons chopped parsley
24 ounces ricotta cheese
2 cups mozzerella cheese, divided
3/4 cup parmesan cheese
1 egg
1 box manicotti pasta shells (14 shells)
24 ounces pasta sauce
2 tablespoons olive oil, divided
3 tablespoons water
garlic and salt - to taste
3 tablespoons chopped parsley
24 ounces ricotta cheese
2 cups mozzerella cheese, divided
3/4 cup parmesan cheese
