Spinach Parmesan Quinoa

This quick and easy side dish is healthy and so delicious! If you've never tried quinoa before, this is a great recipe to try!

1/2 onion, chopped
2 cloves garlic, finely chopped
1 tbsp olive oil
salt and pepper
1 cup quinoa
2 cups chicken stock
2 handfuls baby spinach
1/2 cup grated parmesan cheese
