Stuffed Bell Pepper

This is one of my favorite budget-friendly recipes! It's a great way to stretch meat (or make it vegetarian!) and very healthy and filling.

3 large bell peppers
1 medium onion, chopped
3 tablespoons garlic, minced
1 lb lean ground beef
1 tablespoon parsley
1 teaspoon basil
1 teaspoon beef bouillon
1 tablespoon Worcestershire sauce
1/2 tablespoon mustard
1/2 teaspoon Emeril's seasoning
1 cup cooked rice
1 can Italian style stewed tomatoes, mashed or pureed
1/2 teaspoon Montreal Steak Seasoning
2 teaspoons balsamic vinegar
1 jar marinara sauce
1/4 cup shredded parmesan cheese
16 oz shredded cheddar cheese
Preheat oven to 350 degrees. Slice off top inch of each pepper top, then cut in half and remove the core, inside veins, and seeds....
