Stuffed Meatloaf

This is a great way to jazz-up your meatloaf. With green olives, mushrooms and cheese it really has a great flavor. Make it a part of your next outdoor adventure.

2 lbs. Ground Beef
2 Eggs
1 Pkg Onion Soup Mix
10 Ritz Crackers ( crushed )
¼ Cup V8 Juice
½ Cup Mushrooms ( sliced )
½ Cup Green Olives ( sliced )
1 Cup Swiss Cheese ( cubed )
1½ Cups Cheddar Cheese ( cubed )
¼ Cup Catsup
2 T Brown Sugar
? tsp. dry mustard
Combine ground beef, eggs, soup mix and crackers and V8 and mix well. Pat mixture onto wax paper into a rectangle. Top with mushrooms, olives and cheese, leaving room on the sides and an inch on the end....
