Sweet and Sour Vegetables

Sweet and Sour Vegetables made Chinese Style. Made with Roasted Cauliflower, Broccoli and Pineapples. I used Red Bell Peppers which add a wonderful crunch to this recipe. Quick 45 Minute meal for the whole family. This is a healthy and hearty dinner meal.

1 cup of pineapple juice (fresh or from can)
4 tsp of corn starch
1/2 cup tomato sauce, unsalted
1/2 cup of water
4 Tbsp Apple Cider Vinegar
4 Tbsp Sugar
4 Tbsp Pineapple Juice
2 tsp of soy sauce
1 tsp of salt
1 cup of cauliflower florets
1 cup of broccoli florets
1/2 cup of pineapple chunks
1/2 cup of red onions, cubed
1 red pepper, cubed
2 tsp of extra virgin olive oil for roasting the vegetables
2 tsp of extra virgin olive oil for stir frying
1 tsp of salt (or to taste)
3 Thai Chili
2 tsp of honey or agave
1 tsp of freshly ground pepper
