Sweet & Sour Chicken Salad

A great, healthy way to get your Chinese take-out fix, this Sweet and Sour Chicken Salad is full of fresh pineapple, roasted chicken, red bell peppers and a super tasty sweet and sour dressing!

For the Salad:
•1 cup of your favorite greens (I used a spring mix here)
•1/2 cup thinly sliced red bell peppers
•1/2 cup chopped fresh pineapple (use canned if you must, but I have and it\'s really not the same, just FYI)
•1/4 cup baby lima beans or shelled edamame, thawed if frozen (optional)
•3/4 cup cooked chicken, chopped, warmed
•2 Tbs chopped green onions
•2 Tbs Sweet and Sour Dressing

For the Dressing:
•1/2 tsp tomato paste
•1 Tbs rice wine vinegar (unseasoned)
•1 1/2 Tbs extra virgin olive oil
•1 Tbs orange juice (fresh or Simply Orange)
•1/4 tsp soy sauce, low sodium
•1 1/2 tsp agave or honey
•1/4 tsp fresh grated ginger
