Sweet & Spicy Stir Fry

This spicy yet sweet stir fry is so addicting you'll want to eat it for supper and lunch twice a week!!

2 Tbsp. olive oil
12 oz Pork Tenderloin, cut into cubes
8 mushrooms, quartered
handful of bean sprouts plus more to top
handful of snow peas
1 clove garlic, minced
2-3 pieces instant stir fry noodles
1/2 cup water
1/2 cup soy sauce
1 1/2 Tbsp. soy sauce
1 Tbsp. Sriracha
1 green onion, chopped
1. Heat 1 Tbsp. oil over high heat. 2. Stir fry pork until brown adding more oil if necessary. 3. Add in the garlic, mushrooms, bean sprouts, peas, white part of the green onion, noodles and water. 4. Once the water has evaporated add the soy sauce, honey and sriracha. 5. Cook about 4 minutes. 6. Top with bean sprout and green onions. This recipe is great served up cold the next day.
