Sour Chocolate Cake Recipe

This isn't just any chocolate cake. It's a sour milk chocolate cake with ginger and almonds. This should be a tangy, nutty, spicy and chocolatey cake, not at all your generic sweet chocolate cake. It's got a point of view, perhaps several. At the same time, it's not overly fussy or complicated to make.

1 cup buttermilk
1 cup granulate sugar
2 tbsp butter
3 tsp cocoa powder
1 (½ cup) self-rising flour
1/2 tsp baking soda
1/2 tsp salt
2 egg whites
1 vanilla pod
1/2 cup almonds
1 tsp almond extract
1 oz crystallized ginger

Ingredients for Pastry:
2 c flour
1/2 c sugar
1 tsp baking powder
1/4 tsp kosher salt
1/2 c cold unsalted butter, cut into pea-sized pieces
1 whole egg, plus 1 yolk
