Thai Chicken with Cashew Nuts

This quick and easy dish is a good choice for a busy weekday dinner. Yet it is far from simple and plain. It has two kinds of chewiness coming from the chicken breast and cashew nuts, and rich flavors from all colorful side ingredients. This course originated from China, but Thais have adapted it and made it also very popular in Thai restaurants.

12 oz. chicken breast
2 oz. cashew nuts (fried)
1/2 oz. garlic
4 oz. small onion
4 heads spring onions
2 heads red chili peppers (big)
3 T. vegetable oil
1 T. rice wine
2 T. oyster sauce
1 T. soy sauce
1 T. fish sauce
1 oz. coconut palm sugar
